Kerrymaid’s Apple Shortbread Sandwich
The School Food Plan Standards require 50% fruit desserts to be served twice a week. This cobbler is perfect as it is packed full of fruity goodness! Great as a light summery dessert, it is bright and colourful and one of our children’s favourites.

Buttery
Ingredients
- 250g (8oz) Plain Flour
- 155g (5oz) Kerrymaid Premium Baking
- 60g (2oz) Caster Sugar
- 2 Medium sized apples
- 1tbsp Water
- 1 Lemon
- 1 Clove
Method
Preheat the oven to 180°C
Peel and slice the apples, place in a saucepan and add water and clove
Grate the lemon rind into the saucepan and simmer until soft, drain through a sieve using the back of a spoon to remove juice – put to one side to cool
Sift the flour into a mixing bowl and rub in the Kerrymaid Premium Baking until the texture is like breadcrumbs
Add the sugar and continue to mix until the mixture is soft dough
Divide the mixture in half and on a lightly floured surface roll out to fit an 8×6 tin
Place in the tin and spread the apple mixture over the shortbread. Roll out the other half, dampen the edges of the shortbread and place the other half over the apple mixture – sprinkle with a little caster sugar
Bake in the preheated oven for 15–20 mins – do not brown
Serve with Kerrymaid Double or Kerrymaid Custard

- CUTTING THE SHORTBREAD WHILE ITS STILL WARM WILL HELP PREVENT IT CRACKING AND CRUMBLING TOO MUCH.
