Loaded Cheesy Fries
Kerrymaid Original Slice isn’t just for burgers. Used as a base for an indulgent cheesy sauce with a little spice, the slices give amazing flavour and a perfect glossy texture that coats fries beautifully. Paired as it is here with salty bacon and crispy crunchy fried onions it’s already a degenerate feast, but why not bring it to new heights and lean on the Asian spice in the sauce by topping off with kimchi and toasted chopped peanuts?

Ingredients
- 500ml Kerrymaid Double
- 50g Gochujang paste
- 40 Kerrymaid Original Slices
- 400g Streaky bacon
- 1.8kg Chips
- 200g Spring onions, sliced
- 150g Crispy onions
Method
Add the Kerrymaid Double and gochujang paste to a large heavy-bottomed pan and mix well.
Bring to a boil and add the Kerrymaid Original Slices one by one, stirring constantly until they are dissolved.
Check the seasoning and thickness and adjust as needed (too thin, add a couple more burger slices, too thick add a splash of Kerrymaid Double).
Fry bacon until crispy and chop into rough chunks.
Fry the chips, drain off excess oil and toss in a little salt.
Place the chips in serving dish and ladle over the cheesy sauce.
Top with bacon bits, sliced spring onions, crispy onions and serve.
TOP TIP FROM OUR CHEF
- Try swapping out the Gojuchang paste for Chipotle paste for a smokier Mexican style profile. Or remove entirely for an American style Nacho cheese sauce
